I had a lovely Thursday evening catching up with two dear friends. Our friendship began five years ago on the tennis courts during the Covid pandemic, and our get-togethers are always a highlight. This time, we ventured to Mariposa, a small plates and shareable-style restaurant located within the Mint Museum in Charlotte, a concept I’ve been drawn to recently.

Regrettably, our experience at Mariposa fell short of expectations. We encountered issues with the champagne selection, as they were out of two bottles, and the replacement offered was flat. The dish I initially wanted was unavailable due to a lack of ingredients, and the alternative I received was disappointingly dry. Thankfully, the wonderful company and our laughter more than compensated for the underwhelming meal. Hey, it happens!

My garden has been my focus this week as the weather warms. Though I’ve always loved being outdoors, the arrival of warmer temperatures has me especially eager to garden. A few years ago, I finally had the chance to start (though I’m still learning). I’ve been tending to my elevated garden box, adding more herbs and beautiful flowers. I’m even considering getting a few more boxes. There’s such a satisfying feeling in harvesting fresh herbs for dinner right from your own garden.
